Summery Fruit Pizza

My hubby is home for a brief visit before heading back overseas again for another 4.5 months and when he came home he saw the recipe for Fruit Pizza on my Pillsbury calendar and said I needed to make that! Well we finally got a roll of Pillsbury sugar cookie dough and a package of blueberries to complete the ingredients list and I made this tasty treat today! The sugar cookie got HUGE! When I patted it out on the pizza pan there was about a 1 to 1 1/2 inch border around it, at the end of the cooking time it was almost spilling over the edge, but thankfully stayed contained!

I made a couple tweaks for our personal preference, I used Stevia in the Raw in place of sugar and used fresh kiwis, strawberries and blueberries for the fruits. I omitted the apple jelly as I didn't think it needed anything else besides the fruit on top.

This was really yummy. Kenneth definitely enjoyed it (though, really how can you go wrong with fresh summer fruit, cream cheese and a sugar cookie?!!) This would be really pretty to take as a dessert to a BBQ or potluck. The leftover cream cheese mix in the bowl was great with a few chunks of leftover strawberry too! :D


Summery Fruit Pizza from Pillsbury

Ingredients
1 (16.5-oz) roll Pillsbury refrigerated sugar cookie dough
1 (8-oz) package cream cheese
1/3 cup sugar (or Splenda / Stevia)
1/2 tsp vanilla
2 kiwi fruit, peeled and sliced into thin rounds
1 cup quartered strawberries
1 cup fresh blueberries, rinsed and dried

Directions
  1. Preheat oven to 350 degrees. Spray a 12-inch pizza pan with cooking spray. Press / roll the cookie dough out evenly to cover the pizza pan and form your crust. Bake 16 - 20 minutes in the preheated oven until golden brown. Cool completely, at least 30 minutes.
  2. Meanwhile, in a small bowl beat the cream cheese, sugar, and vanilla on medium speed until smooth and fluffy. When crust is cooled, spread mixture over the crust and then arrange the fruit over the cream cheese layer.
  3. Chill at least one hour before serving. Cut into wedges or squares to serve. Cover and refrigerate any leftovers.
